Chef Ned Bell
'Farm to table' is an essential mandate of this Okanagan born chef. A good portion of his life was spent growing up in the Okanagan Valley which has instilled a lifelong passion for fresh and locally sourced cuisine. At 12, Ned began making dinner for his brother and sister igniting his love of cooking.
Bitten by the 'restaurant bug' early, Ned got his first job at 15, washing dishes at Kerrisdale's Avenue Grille. His culinary studies began at Canada's prestigious, Dubrulle Culinary School, where instructor Rob Feenie inspired Ned to follow him to Le Crocodile. Flourishing as an apprentice under Feenie and Vancouver culinary legend, Michel Jacob, Ned next moved up as Sous Chef for the opening team of Lumiere, a restaurant that put Vancouver on the global culinary map.
Looking to broaden his culinary horizons, Ned moved east to hone his talent at key positions in Toronto and Niagara. A few years later, things turned a 'little bit country' when Ned heeded the call of the west and was soon awarded the "Best Overall and Rising Star Award" from WHERE magazine after opening Murrieta's Grill in Calgary. In 2007, Ned fulfilled a dream and returned to his Okanagan roots to become co-owner and chef at the Kelowna lakeside favourite, Cabana Bar and Grille where he was soon ranked one of Western Living magazine's "Top 40 Foodie's Under 40."
After a 2010 move back to Vancouver to be closer to family with his wife and newborn son, Ned is absolutely thrilled to join the Four Seasons family to work with a hotel and restaurant so loved and established within the industry and community.
Chef Rob Cordonier
Chef Cordonier spent the early years of his career studying with some of British Columbia’s most revered chefs and restaurant teams. After apprenticing at the acclaimed Fairmont Chateau Whistler, Rob pursued work opportunities with top restaurants in Vancouver and Whistler. Highlights of his career include cooking for celebrities including Sylvester Stallone, Uma Thurman, Gary Sinise and the Vancouver Canucks. After rising to the position of Restaurant Chef at the Fairmont Waterfront Hotel in Vancouver, his interest in B.C. wine drew him to the Okanagan where he took on the position of Restaurant Chef at the Sonora Room Restaurant at Burrowing Owl. Chef Cordonier joined the Hillside team in 2010 and is enthusiastically pairing Hillside Estate wines with the bounty of the Okanagan fields in our award winning bistro.
"My mission at Hillside is to produce interesting flavour combinations to compliment our wines. We prepare our dishes simply and treat the ingredients with the utmost respect. Our local farmers are growing incredible produce that takes centre stage on our menu. It is their best that I take great pride in showcasing on your plate."
Chef Mark Ashton
Chef Mark Ashton’s creativity with food showed up at an early age when, for an after-school snack, he invariably opened a can of soup and headed to the vegetable bin and spice rack to jazz it up!
He now brings a world of experience to the The Patio at Lake Breeze. After graduating from a private French Culinary School in 1993, Mark spent many years in the competitive fine dining industry of Vancouver before becoming the Chef de cuisine of an award winning Italian restaurant. In early 2002, the lure of travel and getting to the roots of some traditional cuisines he had grown to love, led him to the Mediterranean – from Spain and Italy to the French Riviera where he further honed and broadened his culinary skills as a personal chef on private yachts.
Having met the love of his life in France, Mark and Helen eventually worked as a team out of San Diego – drawing them closer to Canada and their decision to return here together. Choosing the Okanagan Valley for its beauty and wine industry, they started their new life as owners of the Casa del Coyote B&B in 2008.
Not satisfied with only cooking breakfasts for his guests, Mark was fortunate to find Lake Breeze where he is once again inspired to pursue his passion for artful presentation of food, partnered with our wines. His philosophy is accenting full bodied flavour without complication; choosing products at their peak; and, creating tastes to interest and entice.

Shana Miller discovered her passion for making cheese in 2002. Having been at the right place at the right time, Shana was fortunate enough to have been taught the art of making hand-crafted cheeses by the original cheese maker for Poplar Grove, Sandra Chalmers. When Shana began creating her own cheeses for Upper Bench, almost ten years later, she wanted to mix things up and branch out from her roots. By customizing every aspect of the cheese-making process to suit her brand new, state-of-the-art, CFIA registered creamery, and listening to the creativity of her inner curd nerd, Shana has been able to lovingly cultivate her own unique passion for flavour. Her favourite part of the cheese making process is seeing the first hints of colour on the cheeses. For Shana, cheese making is an ever-evolving process of creating and perfecting delectably hand-crafted cheeses. Shana has also been recently selected as one of twenty artisans in ACE Bakery’s first annual Artisan Incubator, one of four representing British Columbia nationally.
