An Ocean-inspired Feast on June 8 - from YEW to YOU
Executive Chef Ned Bell at YEW restaurant + bar and Four Seasons Hotel Vancouver has always been a strong proponent of sustainable seafood – but this World Oceans Day on June 8, he’s taking his commitment to another level as the venue debuts as a new partner of Vancouver Aquarium’s Ocean Wise program.
If you know anything about culinary master Ned Bell, you know you won’t be disappointed by the sumptuous Ocean Wise dinner with paired wines he’ll be serving up that evening. The dinner will also include a cocktail reception beforehand.
Inspired by the oceans of the world – Indian, Pacific, Atlantic, and Southern – the dinner will celebrate our connection to the ocean. A portion of the proceeds will be donated to Vancouver Aquarium’s Ocean Wise program.

Inspired by the Indian Ocean:
B.C. Spot Prawns with Lime, Ginger, Garlic and Chilis, paired with Teddy Hall, Chenin Blanc, 2010 (Stellenbach, South Africa)
Inspired by the Pacific Ocean:
Roasted Halibut with Sweet-and-sour Cherries and Chimichurris, paired with Foppiano, Pinot Noir, 2009 (Russian River, Sonoma, California)
Inspired by the Southern Ocean:
Grilled and Marinated Flank Steak with Warm Lobster and Potato Salad, Fresh Peas, and Ramps, paired with Vasse Felix, Cabernet Sauvignon, 2009 (Margaret River, Australia)

Three-year Manchego with Rhubarb Preserve and Glass House Strawberry Shortcake, paired with Gonzalez Byass, Palo Cortado, ‘Viejo Apostoles,’ aged 30 years (Jerez, Spain)

The Vancouver Aquarium’s Ocean Wise program is a national conservation initiative created to educate and empower consumers about the issues surrounding sustainable seafood. The Ocean Wise symbol next to a seafood item is the Vancouver Aquarium’s assurance of an ocean-friendly seafood choice.
